Sweater weather and fall leaves mean it’s pumpkin season — and pumpkin spice treats are everywhere! This pumpkin spice protein smoothie is a delicious way to celebrate fall’s favorite gourd. This creamy, seasonal treat packs a nutritious punch with lots of protein, healthy fats from a dab of almond butter, and some serious beta-carotene from canned pumpkin. Enjoy it for a quick and easy breakfast or a midday snack.
Ingredients
- 1 1/2 cups cold almond milk (or other milk)
- 1/3 cup canned pumpkin puree, chilled (not pumpkin pie filling)
- 2 scoops vanilla protein powder (plant-based or regular)
- 2 tablespoons almond butter
- 1 teaspoon pumpkin pie spice blend (from the spices section)
- 2 teaspoons maple syrup (extra to taste)
- Cinnamon (optional garnish)
Tools
- Measuring cups and spoons
- Mixing spoon
- Regular or bullet blender
Instructions
1. Combine the milk, pumpkin puree, protein powder, almond butter, pumpkin pie spice mix, and maple syrup in the blender jar.
2. Stir the mixture with a mixing spoon to incorporate the protein powder and ensure it doesn’t clump at the bottom of the blender jar.
3. Blend the smoothie for about 20 seconds or until smooth and creamy.
4. Taste and add additional maple syrup if you prefer a sweeter flavor.
5. Pour the smoothie into two glasses, garnish with a sprinkle of cinnamon if desired, and enjoy.
